MMMM... TGI Fridays Chicken N Cheese - Imitation Recipe
TGI Friday's is one of my FAVORITE restaurants. But when I go there, I always get the same thing, the Sizzlin' Chicken 'n Cheese. It sounds plain, but this dish is PACKED with flavor. Please note this is not the actual recipe, but is VERY, VERY similar. I found this recipe from http://www.cdkitchen.com and modified it to my liking. It is VERY easy to make. Ingredients:
2 chicken breasts
2 tablespoons olive oil
1 teaspoon minced garlic
1/2 cup shredded Pepper Jack and/or Sharp Cheddar cheese
Mashed Potatoes
Marinade-
2 tablespoons chopped garlic
3 tablespoons chopped parsley
2 ounces olive oil
1 teaspoon crushed red pepper flakes
1/4 teaspoon black pepper
1/4 teaspoon salt
Pepper & Onion Medley-
1 green pepper, julienne
1 red pepper, julienne
1 yellow onion, julienne
*Feel free to use a bag of frozen peppers and onions. That's what I did, and it still tasted great!*
1. Cut chicken breasts lengthwise to ¼ inch thickness. With a marinade brush, brush the marinade on the chicken breasts and place in a skillet with 1 tbsp olive oil on medium heat.
2. Either use a pepper/onion medley that comes frozen in a 10-12 oz. bag or use fresh peppers and onion. Sauté the pepper and onion medley with the garlic with the chicken until the chicken is a golden brown color and the vegetables are tender.
3. Prepare mashed potatoes according to your liking. Top chicken, still in the pan, with the shredded cheeses and cover with lid. Leave the lid on until the cheese is melted. Remove from heat and enjoy!

If you are reading this you probably enjoy baking and cooking. Well, both involve grocery shopping, right? Well, this is where couponing comes into play! In January 2011, I was browsing the channels on my TV and came across a show called "Extreme Couponing". Intrigued by the idea of saving money, I watched it from beginning to end, completely amazed through every minute of it! "Extreme Couponing" which aired on TLC, followed four regular people and their couponing endeavors. I watched these people take $3,000 grocery bills down to pennies (no joke!). One of the featured guests on the show is Nathan Engels, of WeUseCoupons.com. After watching the show and signing up for his site (it's free to join!) I have noticed myself inching closer and closer to becoming an "extreme couponer." His site features grocery store coupon match ups for almost all of the grocery stores, including the drugs stores, and Coupon Previews of the Sunday paper inserts, before the come out!

Cake Flour
Well I went shopping at a different Publix than I normally do, and I finally found CAKE FLOUR on the baking aisle! Cake flour is 27 times finer than all purpose flour, and I can't even begin to tell you how much of a difference this made my homemade cake taste. The cake wasn't clumpy at all, didn't have a cardboard taste, and the dough was a perfect consistency! At $3 a box for cake flour, it was certainly worth it!
I bought both the King Arthur unbleached cake flour, and the Swans Down bleached cake flour. I used the King Arthur brand for this recipe! Will keep you updated to see how the Swans Down brand compares!
